  • Green onion: a small amount

For Marinating Pork

  • Gochujang (Korean red chili paste): 1 tablespoon
  • Mirim (cooking wine): 1 tablespoon
  • Soup soy sauce: 1/2 tablespoon
  • A pinch of salt
  • Minced garlic: 1 tablespoon
  • Ground black pepper: a pinch

Instructions

  • Marinate the pork with the listed ingredients for at least 30 minutes.
  • In a pot, stir-fry the sliced kimchi, marinated pork, kimchi juice, and sesame oil on low heat for 3-5 minutes. (The pork already contains fat, so you don’t need much sesame oil.)
  • Add 1 cup of water to the fried kimchi and bring to a boil. Then, add the remaining cup of water for a richer broth.
  • Once it starts boiling, add onion and tofu.
  • Add soup soy sauce and let all ingredients blend well.
  • Add minced garlic and one sliced chili pepper. Adjust the seasoning with salt, then add green onions and the remaining chili pepper. Boil for a moment more, then finish.
