Japchae, a traditional Korean dish, is a delightful mix of glass noodles, assorted vegetables, and meat. Today, we’re exploring the famous chef Baek Jong-won’s golden recipe for Japchae. This recipe is an easy and delicious way to prepare this classic dish.
Ingredients
- Glass noodles (about the size of a 500 won coin)
- 1/4 carrot
- 2 shiitake mushrooms
- 1/2 onion
- 2 sheets of Busan fish cake
- 4 tablespoons of sesame oil
- A sprinkle of sesame seeds
- 10 stalks of chives
Japchae Sauce
- 4 tablespoons of soy sauce
- 1 tablespoon of sugar
- 1/2 tablespoon of minced garlic
Preparation Method
- Prepare Noodles: Soak the glass noodles in water. If short on time, boiling them is fine.
- Prepare Ingredients: Slice the carrot, shiitake mushrooms, onion, and fish cake into appropriate sizes. For a more decorative dish, add mushrooms or bell peppers.
- Prepare Meat: Season the pork for Japchae with salt and pepper.
- Stir-fry: Stir-fry all the ingredients. Add a bit of salt for the base seasoning.
- Make the Sauce: Mix soy sauce, sugar, and garlic to make the Japchae sauce.
- Cooking: Put all the ingredients in a large pan, including the boiled noodles. Do not use heat yet. Gradually add the sauce and adjust the seasoning.
- Final Touch: Once everything is well-stirred, drizzle sesame oil and sprinkle sesame seeds. If you have chives, add them at the end and stir-fry.
